Cream of Spinach Soup - the Amrita Cookbook
Ingredients:
2 onions
1 tbsp oil
Large bunch spinach (450g)
1 cup water
1 tin Coconut cream
Salt
Method:
Saute the chopped onion in the oil until transparent. Add the washed spinach and water and cook until tender. Blend, and add the coconut cream. Salt to taste. Heat and serve.
